HOW TO MAKE MEXICAN CASSEROLE?
Simple Mexican Casserole Recipe has the finest layers of cheese, ground beef, tortillas, and more. This casserole is great for dinner any night of the week and is filled with lots of flavors.
470g drained extra lean ground beef.
1/2 cup onion chopped.
1/4 Cup of “canned jalapeno slices” chopped.
1 medium can dice canned tomatoes.
1 can kernel corn drained.
1 can “BLACK.BEANS” rinsed, and drained.
1 PKG taco seasoning mix.
3/4 Cup sour cream”non-fat”.
1/3 Cup “Mexican cheese blend” shredded.
fresh cilantro chopped.
I brown ground beef and onions in a large skillet, for 10 to 15 minutes or until fully cooked, stirring continuously.
Drain well and rinse to remove all fat with hot water and return the mixture to the skillet.
I stir in the black beans, tomatoes, corn, taco seasoning, and jalapeños, I mixed all these ingredients well using a wooden fork.
I lowered the heat and simmered for five minutes.
Meanwhile, I spray the non-stick cooking spray in a two quarter baking dish. I sliced each tortilla in half, I put 8 pieces, overlapping slightly, at the bottom of the sprayed baking dish.
I spoon half the beef mixture equally over the tortillas. I spoon the sour cream over the beef mixture, I scatter it uniformly. I covered with 8 remaining tortilla halves and the remaining beef mixture.
I heated the oven at 350oF and baked for 25 to 30 minutes.
I remove from the oven and sprinkle with the cheese, and I let it stand covered for 5 minutes or until cheese is melted.
I sprinkled with minced cilantro and served with a green salad.
