How To Make Grandma’s Famous Carrot Cake?

Few things are more valuable in this life than recipes passed down by mothers and grandmothers. It’s a lot more than just a recipe. It holds memories of family get-togethers and holidays, of discussions and laughter that poured from the kitchen to the table. Not to mention the flavors and smells that will bring back fond memories of your youth and family.
This Grandma’s Old Fashioned Carrot Cake is made with carrots, sugar, and pecans is a delicious traditional recipe. The cake is sweetened with mashed pineapple, which often leaves it moist and soft.
The flavor of the powdered sugar and the tartness of the cake batter provide the right mix.

To make this famous carrot cake, you’ll need the following ingredients:

3 Cups.Of grated carrots.

2 Cups.Of all-purpose flour.

2 Cups.Of white sugar.

2 small spoons.Of baking soda.

1 small spoon.Of baking powder.

Half a Small spoon.Of salt.

1 small spoon.Of ground cinnamon.

4 eggs, medium-sized.

1 Cup.Of vegetable oil.

1 small spoon.Of vanilla extract.

1 medium can. Of crushed pineapple, with juice.

1 Cup.Of chopped pecans.

3 and ½ Cups.Of icing sugar.

1 Pkg.Of Neufchatel cheese, I used the medium-sized package.

½ Cup.Of soft butter

1 small spoon.Of vanilla extract.

1 Cup.Of chopped pecans.

INSTRUCTIONS:

Step 1:

I preheated the oven to 350 degrees Fahrenheit, and using butter, I greased a medium skillet of 9-inch and dusted it with flour.

Step 2:

Then, I combined grated carrots, with the flour, white sugar, baking soda, baking powder, salt, and cinnamon powder in a large mixing bowl.

Step 3:

After that, I stir in the eggs, canola oil, a small spoon of vanilla extract, crushed pineapple, and 3/4 cup of chopped pecans.

Step 4:

And, I poured the mixture into the pan that has been prepared before.

Step 5:

At this point, I baked it for 30 to 40 minutes, until a wooden tester inserted in the middle of the cake comes out clean.

Step 6:

I removed it from the oven and let it cool completely over a wire rack.

Step 7:

To make the icing, I just combined confectioners’ sugar, with Neufchatel cheese, I added 1/2 cup of margarine and vanilla extract in a medium mixing dish.

Step 8:

And I stir in 1 cup of chopped pecans after whisking until smooth.

Step 9:

To finish, over the chilled cake, I spread the icing mixture.
