How To Make Broccoli & Bacon Salad:
5 cups of small broccoli florets … or two heads
8 slices of bacon
1/2 cup … or more of finely grated cheese
1 cup mayonnaise (I use 3/4 of a cup)
2 tablespoon cider vinegar … I use 1 1/2 TB
1/2 cup chopped Red onion
1/3 cup of sugar – taste it and then add more if you like it a little sweeter.
Cook the bacon over medium heat just until crisp and drain on paper towel. Crumble the bacon into small pieces and set aside.
Bring a large saucepan of salted water to a boil. Add the broccoli and blanch it until bright green and slightly softened, no longer than 3 minutes. Run under cold water to stop the cooking, and drain thoroughly.
In a mixing bowl, combine the mayonnaise, vinegar, onion, sugar (OPT: raisins & pecans & sunflower seeds ) Add the broccoli and toss it all together with the dressing.
Put it in a bowl with a lid and Refrigerate for 1 hour. Just before serving place it into a serving bowl and sprinkle the cheese & crisp bacon pieces over the top. Serve immediately.
